What is Blast Chilling and Blast Freezing?
Blast Chilling and Blast Freezing, also known as Shock Freezing, is the rapid chilling of food. This ensures it gets through the danger zone (5-60°C) as quick as possible. Blast Chiller and Freezers achieve this by the targeted blowing of chilled air, at a high velocity, until the core temperature of your food product has reached under 5°C (Blast Chilling) and under -18°C (Blast Freezing).
Why Use a Blast Chiller and Blast Freezer?
There are many different reasons as to why any kitchen creating a food product choose to incorporate blast chilling or blast freezing into their processes, as there are many different benefits that a blast chiller and blast freezer provides. Please read through some of the main benefits below:
Improved Food Safety
At around +37°C, the number of bacteria doubles every 20 minutes. Blast Chillers and Blast Freezers cross this range as quickly as possible, taking the core of the temperature of the food to under +3°C in less than 90 minutes, and under -18°C in less than 240 minutes. With less weight loss and increased moisture retention, blast chilling and blast freezing ensures you capture all of the original organoleptic qualities of your food, including its colour, texture, shape, nutrients, and most importantly, its taste. Once regenerated to serve, it will still taste as if it’s just been freshly cooked.
Time and Energy Savings
As your food will be chilled quicker, it will be ready to continue being processed, i.e. portioned, plated and mixed with other food products, or simply ready to transport to your retail venue/customer, enabling you to process rush orders faster. Your food will be entering your cold storage rooms already at temperature, they will not be working as hard as previously. As a result, you will have energy savings from your power bill, as well as more longevity from your other refrigeration equipment.
